Honey Crystallization
Is Crystallized honey bad?? For some reason there is a perception that honey that crystallizes has “gone bad” or is contamination has occurred. This is far from the truth. Honey is made up of three sugars: Fructose, glucose and sucrose, and since they are super saturated, means they can separate and crystallize. Did you know that honey crystallizes even in the beehive?? So don’t throw it away, the bees don’t! Crystallized honey is delicious. You can spread it on your biscuit, bagel, or even put it in your tea.It is great for cooking as well as a glaze.
Honey will crystallize quicker in these conditions.
1) Temperature (Never Refrigerate your honey)
2) The ratio of fructose, glucose and sucrose in the honey (Bees control this)
3) Pollen
We could go on all day about the different types of pollen and the flowers that crystallize quicker, but I am sure I would be boring you. So, let’s bring it down a little and let you know what you see. Store bought honey is mainly filtered to help slow down this process of crystallization. Truthfully, they are removing the “good stuff” my papaw would say, out of they honey to make it last longer.So, remember, it is a natural process for raw, unfiltered honey that you will receive from the Heavenly Bee, to possibly end up crystallizing. So, you can get out that butter knife and embrace it, and smear it on that biscuit, or we can give you some helpful tips on how to return it to a liquid.
To return to Liquid State
Heat up a pan of water to about 100-110 degrees. Remove that pan of water from the heat and then place your bottle in that water. Careful don’t burn yourself now!!! Let the honey sit in that water and gently come back to that liquid state. Note: When most honey starts the crystallization effect, it is hard to stop.When it cools, don’t be surprised if it starts to return to the crystallization process. So, we suggest only heat up what you are about to use. That way you’re not continuing to heat up the honey.
Just be patient while re-liquefying. One more thing. Never Microwave your honey!!! It will kill instantly all the benefits it had for you that were natural. We hope this helps you and we hope you are having a blessed day!
